Baroness Chocolates' ingredients are certified 100% organic and come purely from nature, but chocolate does not happen in nature, it happens by nurture.
A raw cocoa bean does not have any chocolate flavour until it is fermented and that needs human help. The fermentation process is crucial to develop the chocolate flavour. After the cacao beans are dried they are covered with the plant fruit, plant leaves and tropical flowers for many days. Each day the fermenting beans are aerated and fresh plant matter is added. As the plant matter decomposes the micro-organisms from the soil and plant matter provide the beneficial effect on the cocoa beans. This effect changes the flavour and reduces the tannins in the bean, providing for a deeper and less bitter chocolate flavour. The longer the fermentation period the better the chocolate becomes. Our extra-long fermentation gives our chocolate a wonderful deep and full cocoa flavour.
Our cocoa is obtained from Rainforest Alliance Certified farms. The farmers take steps to maintain or increase the tree cover, conserve soil quality and prevent erosion, reduce chemicals use, and protect wildlife.
Those same farmers also participate in fair-trade programs to help to ensure the well-being of workers and their families by facilitating access to education and health care.
We believe chocolate should be a generous dessert that is fun to eat and should create happiness and excitement. It’s ultimately important to us that all components of our chocolate bar production be joyful and harmless.
